Slow Cooked Oats in Apple Juice

Ingredients 1 & 1/3 cup of oats 3 & 1/3 cup of 100% apple juice Tinned apple or apple with skins removed grated, finely diced or finely sliced. Method Put the oats, apple juice, and apple in the slow cooker. Leave the slow cooker on high, if you're wanting your oats faster, or low if you want them to cook over a longer period of time (eg overnight). The oats are cooked when they are no longer super liquidy and the oats absorb all of the apple juice. If they become too gluggy, you've probably left them on too long. I cooked mine for 2 hours on high, and they were perfect.

Breakfast Parfait

Ingredients Greek yoghurt (I use Farmers Union Greek Yoghurt with a hint of Vanilla) Special K (Can be substituted for other refined cereal, like Rice Bubbles) Tinned peaches Layer the greek yoghurt, Special K and peaches. Drizzle with honey. Yum! You could also add a banana or substitute the peaches with melon. You could also substitute the yoghurt for custard for a sweeter treat.

Pumpkin and Ginger Soup

Pumpkin soup is my all-time favourite recipe to make. The addition of ginger gives the pumpkin soup an extra zing, along with its extra health benefits. Ingredients 4 tsp garlic paste 2 tsp ginger paste 1/2 pumpkin, diced 1 1/2 L chicken/vegetable stock 1 tbsp soy sauce Salt and pepper to taste Sour cream to taste Method 1) Fry off on and garlic until onion is translucent. 2) Add ginger and pumpkin. Fry off for 5 minutes. 3) Add stock and soy sauce, and bring to boil. Reduce heat to a low simmer. Add salt and pepper to taste. 4) Simmer for 20 minutes until the pumpkin is tender. Allow to cool slightly. Using a stick blender, blend until combined to a soup constancy. 5 ) Serve with a dollop of sour cream and crusty bread.

Stir Fry with Tofu, Mushrooms, and Cauliflower

For those of us with Crohn's Disease, we need our vegetables are well cooked. Stirfry traditionally has a bit of crunch in the vegetables, so f or this recipe, I pre-steam the cauliflower before adding it to the stir fry.    This ensures the stirfry can be cooked fast, as it should be traditionally, yet the vegetables will be well done. I also discovered garlic and ginger paste. When I am not flared, I always start my stir fry with Onion, Garlic and Ginger. As an alternative, I use the pastes, as they are already minced down quite well.  If there is something on the ingredients list that you cannot handle well, leave it out, or try to fit in an alternative you can handle.  Ingredients Peanut oil Garlic paste Ginger paste Mushrooms  Cauliflower, Steamed Marinated tofu White Rice, Steamed Sauce 1 Chicken stock cube 2 tablespoons soy sauce 1 tsp sesame oil 1 tsp cornflour 2 tbsp Mirin or white wine 2 tbsp ginger or garlic paste Mix ing...
